Mince pie dodgers. For your #plantbased festive season. Woo hoo
Need a Festive recipes for you! #Plantbased snowflake bread
Put650g/ 4.5 (approx) cups bread flour in a bowl with 1 tsp salt, 250ml/1 cup oat or nut milk
50ml/ or 3.5 tbsp of vegetable or canola oil 60ml 1/4 cup water and 1 sachet/packet (7g) of fast action dried yeast. Mix together and then knead for 10 minutes if doing by hand or 5 minutes in a machine.
Divide the ball in to four and roll each ball in to a circle using a pan lid if you want it to be perfect. Then melt 60g 1/4 cup butter with 50g 1/4 cup sugar with 1tbsp cinnamon in a pan. Leave to cool a little and then brush each circle with it (except the top circle). Layer up the circles as you go.
Put a tequila glass or an egg cup in the centre of the circles and press down so it leaves a mark.T Then remove the glass. Mark the dough in to eight like a pizza cutting all the way down to the tray but going just up to the circle mark but not through it.
Then divide and eighth in to two. Take these two pieces and twist them outwards as per the video. Then pinch the end. Repeat with the rest of the eighths. Then put in the oven and bake for 30-40 minutes at 200c/400f or until the bread sounds hollow when tapped underneath. Once baked remove from the oven and sprinkle with icing sugar and then serve.
Try using mince pie filling instead of the sugar mixture. I would blitz the mince pie mixture in a food processor first so it is nice and smooth before using. Jam or lemon curd would also work well.
