  • It's time to grab some theatre style samosas at home which are healthy, super tasty and not to forget home-made!

Serves: 12 - 15 Samosas | Preparation Time: 30 minutes | Cooking Time: 20 minutes

Ingredients Required for Samosa Patti:
- Refined Wheat Flour (Maida) / मैदा - 2 cups
- Oil / तेल - 2 tbsp
- Salt / नमक - 1 tsp or to taste
- Water as required

Ingredients Required for Cheese Samosa Filling:
- Grated pizza cheese / पिज़्जा चीज़ - 2 Cups
- Spring onions / हरी प्याज़ - 1.5 Cups
- Green chillies / हरी मिर्ची - 2-3 chillies
- Crushed Carom Seeds / Ajwain / अजवाइन - 1.5 tsp
- Cottage Cheese / Paneer / पनीर - 1 Cup
- Salt / नमक - ½ tsp or to taste
- Pepper / काली मिरि - 1.5 tsp
- Amchoor Powder / आमचूर पाउडर - 1 tsp
- Samosa Patti / Samosa Strips / समोसा पट्टी

Ingredients Required for Potato Samosa Filling:
- Potato / आलू  - 4, boiled and roughly mashed
- Oil / तेल - 2 tbsp
- Coriander seeds / खड़ा धनिया / धनिया के बीज -1 tbsp lightly crushed 
- Red chilli flakes / चिल्ली फलैक्स - 1 tbsp
- Cumin Seeds / जीरा - 1 tbsp lightly crushed 
- Green chillies / हरी मिर्ची - 2-3
- Haldi / हल्दी - ½ tsp
- Salt / नमक - ½ tsp
- Onions / प्याज़ - 1
- Coriander / धनिया - handful

      

  • A beginner's recipe for Sindhi Kadhi - full of flavour and promise!

Ingredients:

2-3 tablespoons of oil
¼ teaspoon asafoetida
1 tablespoon coriander seeds, coarsely ground
1 teaspoon mustard seeds
1 teaspoon fenugreek seeds
1 teaspoon cumin seeds
7-8 curry leaves
½ inch of ginger, grated
4 tablespoons of gram flour
2 tomatoes, grated
2-3 green chilies, slit
10-12 ladyfingers
16-18 cluster beans / guwar
2 large potatoes, cut into big pieces
½ teaspoon turmeric powder
1 teaspoon red chili powder
4-6 pieces of kokum
Water for thinning
Salt to taste

Method:

Heat the oil in a stockpot or large saucepan. Add the asofoetida, coriander seeds, mustard seeds and cumin seeds. When the seeds start to sizzle add in the curry leaves and the grated ginger and chilies. 
Give the oil mixture a stir and then with the heat on low add in the gram flour while constantly stirring. The gram flour will mix with the oil and spices and start to become lumpy.
Cook the flour for a 1-2 minutes until the colour changes. Then begin to add in water a little at a time stirring to make get rid of the lumps.
When you have a smooth mixture, add in the tomatoes, potatoes, drumsticks, cluster beans and ladyfingers. 
Add in the turmeric and chili powder along with the salt and stir the kadhi.
Let the kadhi come to a boil and add in the kokum
Then let the kadhi simmer for half an hour or until the vegetables are cooked through

HYDERABADI MASALA CHICKEN CURRY: 

Ingredients:

- Chicken with bones - 750 gms 
- Onion - 5  big (2 to fry & 3 for the curry)
- Curd - 2-3 tbsp
- Ginger garlic paste - 1 tbsp 
- Turmeric powder - ½  tsp
- Coriander powder - 3 tbsp
- Red chilli powder - 2 ½ tbsp
- Ghee - 1 tbsp 
- Lemon juice - 1 lemon
- Mint leaves - ¾ cup chopped
- Coriander leaves - 1 cup chopped
- Oil - 3-4 tbsp

MALVANI CHICKEN CURRY:

Malvani Spice Mix Powder:
- Sankeshwari Dried Red Chillies - 15-20
- Fennel seeds - 2 tbsp
- Khus Khus - 2 tbsp
- Coriander seeds - 1 tbsp
- Cinnamon - 1 
- Cloves - 10-12
- Peppercorns - 12-15
- Black cardamom (Badi Elaichi) - ½ pod
- Star Anise - 2
- Dagdi Phool/ Pathar Phool (Black stone flower) - 2 tsp
- Bay leaf - 2

Malvani Paste:
- Onions (sliced) - 4 
- Coconut (dried) - Half 
- Garlic - 10-12
- Ginger - ½ inch

To Cook:
- Oil - 3 tbsp
- Cloves- a few
- Cinnamon - 2
- Star Anise - 2 
- Pepper - a few
- Bay leaf - 2 
- Onion (finely chopped) - 1 
- Turmeric - ½ tsp
- Salt - to taste
- Coriander - garnish

METHI MURG CHICKEN

Marination:
- Chicken - 1Grams
- Yogurt - 400 Grams 
- Salt - to taste
- Kasuri Methi (Dry) - 4 tbsp 

To Cook: 
- Oil - 4 tbsp 
- Cinnamon - 2 
- Bay Leaves - 2
- Cardamom (Small) - 2
- Cardamom (Big) - 2
- Mace (Javitri) - 1  
- Onions (Finely Chopped) - 3  
- Methi (Chopped) - 1 ½ to 2 cups 
- Garlic (Chopped) - 6 
- Ginger (Chopped) - An inch 
- Turmeric powder - 2 tsp 
- Red chilli powder - 2 to 3 tbsp
- Coriander powder - 2 tbsp 
- Green chillies - 3 or 4 
- Water
